Gut Health Recipe: Miso Soup
INGREDIENTS
4 cups water
2-3 Tbsp miso paste
1 cup diced tofu
1/2 cup sliced mushrooms
1/2 cup chopped green onions
1 sheet nori, cut into small pieces (optional)
1 Tbsp soy sauce or tamari (optional)
METHOD
Bring the water to a boil in a pot. Reduce the heat and add the tofu, mushrooms, and nori, simmering for 5 minutes. Turn off the heat and dissolve the miso paste in a small amount of the hot water, then add it back to the pot. Stir in the green onions and soy sauce if using. Serve warm .
